Easy Buckeyes

I made these and they are so good !!!! Will have to make several batches for gift giving. They’re awesome!

Seriously, you need to make these easy buckeyes. They’re so good, so easy....so delish!


Ingredients
  • 1½ cups peanut butter
  • 1 cup butter, softened
  • ½ teaspoon vanilla extract
  • 6 cups confectioners' sugar
  • 4 cups semisweet chocolate chips or chocolate candy coating

Vegan Peanut Butter Cup Pie

This was delicious and so easy to make. My son loves it as well!! he says it’s the best dessert I’ve ever made and everyone raved about it! Seriously delicious, vegans and non-vegans alike can appreciate how great this pie is! Chocolate and peanut butter–my absolute favorite combination! Ingredients    CRUST 1 sleeve graham crackers (or sub similar gluten-free cracker/cookie) 4 1/2 Tbsp melted vegan butter or coconut oil    PIE 12 ounces firm silken tofu, slightly drained and patted dry 1/2 cup creamy salted natural peanut butter (I like Trader Joe’s brand) 1/4 cup agave nectar or maple syrup (or sub honey if not vegan) 1 14-ounce can (~1/34 cups) full-fat coconut milk OR coconut cream, chilled overnight (no shaking the can! To-Die-For Carrot Cake

It definitely is to die for cake. :) A friend of mine once made a carrot cake and since then I have been dying to make one at home! Carrot cake is my favorite, and the addition of pineapple AND coconut… pretty sure this will be a little slice of heaven!  I made it today for our wedding anniversary and it was so delicious!  I’m pretty sure i did everything else right but WOW it was so moist and delightful! and as much as i love cream cheese frosting, it wasn’t for any occasion so I opted for sifted powdered sugar with nutmeg… it was quick and easy. I just reduce the apple sauce to 1/2 cup oil and 1/2 cup applesauce and still taste delicious! It’s such a wonderful cake. Great recipe.  It was a big hit with my husband and family.
